Am I on the right track to get into a college like NYU?

You are right on track. You have a good GPA and if you can get a GPA of 3.9 for your junior and senior years, your average will go up to 3.8195. You do need to study for the SAT. A really good study guide is The Official SAT Study Guide (link is below). While NYU looks at more than GPA and SAT results, a score of 1540 on a real SAT will put your application in the rejection pile. When you are joining clubs, look at being more than just a member. Colleges like to see leadership roles. Good luck!
